Blueberry Maple Bran Muffins


 

Blueberry Maple Bran Muffins

Ingredients
1 cup flour
¾ teaspoon kosher salt
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon cinnamon
1 cup plain yogurt
½ cup vegetable oil
packed light brown sugar
¼ cup pure maple syrup
2 large eggs
½ teaspoon vanilla
1 ½ cup bran cereal
1 cup wheat bran
1 cup blueberries

Method
Preheat oven to 400 degrees. Line or grease 12 standard size muffin tins.

Whisk together flour, salt, baking powder, baking soda and cinnamon.

In another bowl, mix yogurt, oil, brown sugar, maple syrup, eggs and vanilla. Stir in dry ingredient mixture. Stir in bran cereal and wheat bran. Fold in blueberries.

Spoon batter into muffin cups. They will be mostly full. Bake for 18 minutes until they test clean.

Rating: I do like a good bran muffin. Unfortunately, this wasn’t one of them. If it wasn’t for the blueberries, these would have very little to recommend them. If you want a good blueberry bran muffin, I recommend making either these from the Barefoot Contessa, or subbing blueberries for the pears in this overnight ginger almond bran muffin recipe, which I've found works quite well.
